Weidman changed his game and it worked, got him a world title. Before that he was mostly just a wrestler. Now he likes to strike, and it works for him on a whole.

Not exactly an example of someone changing their style. That's more like someone evolving their striking and using it more once they've improved. That's what all wrestlers and BJJ fighters have had to do.

I'd argue that he isn't the type of fighter you guys are talking about. I would say someone like Sean Sherk changed his style from a grappler to a striker once he learned to box and the same with Hendricks when he was on PED's and started KO'ing dudes with one shot. Koscheck is another guy who started off as a wrestler, and then fell in love his striking after while once it heavily improved. Wrestlers seem to be able to improve their striking a lot more than BJJ guys do.
Bisping's wrestling was terrible in the beginning, he did shore that up nicely

I remember thinking Sonnen would roll Bisping based on his wrestling & Bisping almost stole that fight with his own wrestling & wrestling defense.

Bisping came a long way with his wrestling

He doesn't use his wrestling much anymore, I'd definitely say that's changing their style.

Evolving doesn't mean changing your style.

He's kinda like Chuck in that he uses his wrestling defensively, and for the odd TD when it's required for points or because he's rocked

Yep, he always had very good TD defense for the most part and even shot the odd time when he had to. Very career for the most part and one of the best resumes of fighting all the top guys at 185 over the years. Even took an opportunity and won a title that most people never would have thought he would have ever done.

I don't ever recall Bisping having terrible wrestling. I always thought his wrestling was really solid from a defense standpoint. I don't really remember anyone putting him on his back and dominating him in consistent fights. He was never an offensive wrestler of any kind, but his defensive wrestling has always been impressive to me.

Weidman has absolutely used his wrestling. Where are you getting that from? He used it in each of his last few fights. Just because he isn't on top of someone going from one submission attempt to another and controlling someone the entire time doesn't mean he isn't using his wrestling. It isn't easy to dominate all of the guys wrestling wise when you are fighting nothing but guys in the top 5 who all have amazing grappling and wrestling themselves. He can't just go out there and grapple fuck all those guys like that, but he's used take down defense and attempted take downs and grecko style wrestling in several of his last few fights.
